Nate’s Low-Carb Meatballs

BEAST Balls: Low-Carb Meatballs

This recipe was originally from Body Beast, but I made a couple small changes to make it even better.

These appetizing meatballs are flavored with fresh cilantro. They’re simple to make and can be frozen and reheated easily.

 

 

Ingredients:

– Nonstick olive oil cooking spray
– 1 pound lean grass-fed beef (90/10)
– 1 teaspoon Himalayan sea salt
– 1/2 teaspoon ground black pepper
– 1 large egg, lightly beaten
– 1/2 cup quick-cooking rolled oats
– 2 cloves garlic, finely chopped
– 2 tablespoons chopped fresh cilantro
– 2 tablespoons all-natural tomato sauce

Directions:

Preheat oven to 400 degrees; lightly spray a large baking sheet with olive oil cooking spray and set aside.

Combine all ingredients in large bowl; mix well with clean hands.

Roll mixture into 16 small meatballs; place on prepared baking sheet.

Bake for 15-18 minutes, or until no longer pink in the center.

Makes 4 servings, 4 meatballs each.

Top with a high-quality spaghetti or marinara sauce such as Gia Russa and serve with a side of veggies for a perfect “protein, produce and water” meal.
